What's Cookin'?

So tonight I have been in Martha Stewart Mode, cooking up a storm, mainly for my office potluck lunch tomorrow, for which I went to my French cookbook for this trusted favorite, Quiche Alsacienne (Alsacian Style Quiche). It's easy to make and tastes orgasmic.

Quiche Alsacienne:

You'll need:
1-2 tablespoons butter
2 cups sliced leeks (about 2 leeks)
1 9-inch frozen pie crust, thawed (unless you have time to make one from scratch)
1 cup grated Swiss and/or Gruyere cheese
1/4 cup grated Romano cheese
1 tablespoon flour
4 eggs
1 3/4 cups heavy creme
Fresh ground pepper & salt.

Preheat oven to 450. Melt butter in a skillet and saute the leeks (be sure to wash them thouroughly... leeks are notorious for having dirt in them) until tender. Spread evenly over the bottom of the pie crust in a 9-inch pie pan.
In a bowl, toss together the cheeses and the flour. Spread this over the leeks.
In another bowl, beat together the heavy creme and the eggs. Add the salt & pepper to this, and pour over the cheese layer.
Bake 15 minutes. Reduce heat after to 325, and continue baking for 30 mins, until the crust is browned and you can stick a fork in the center of the quiche, and it comes out clean (texture should be light and fluffy).
